Pao de queijo

These Brazilian cheese breads are a savoury street food winner

When it comes to food, nothing is better than homecooked. My parents loved to cook when I was young. My dad always brought out the best cakes for birthdays and tasty meals on special occasions. I would always be excited seeing him in the kitchen being busy and doing ten things at once. I was never taught to cook from him, yet I felt inspired to just watch and enjoy eating the food instead. I always wondered if he had any recipes he would share eventually. After some digging and persistence, he shared with me his recipe for one of my favourite Brazilian street foods; pao de queijo.

Ingredients:

1 egg

⅓ cup olive oil

⅔ cup milk

1½ cups (170 grams) tapioca flour

½ cup grated parmesan cheese, you can use feta or another type of grated cheese if you prefer

1 teaspoon of salt

Method:

Combine all the ingredients in a mixing bowl.

Grease a muffin tin, roll the mixture into little dough balls and place them into the tin.

Bake at 200C for 18-20 minutes.

These are best eaten warm and fresh from the oven.
